I've been so busy today reading, adding to and being entertained by the tag-team story inspired by BruinWi and Gotmoof's exchange, that I have gotten little else done. I guess I can allow myself a day of frittering fun, since I have done the moving trip, the two weddings with their attendant trips to Dallas and Boston in the past 6 weeks.

Soon it will be time to gear up and tackle some new goals, but today's indulgence felt good. I also have enjoyed laughing at the cleverness of the writing of my live journal friends.

Tomorrow is my ex David's 61st birthday. I adore this man and always try to get him something special for his birthday. I found the perfect gift in Dallas at Crossroads Market on Tuesday. "Ruby Ann's Down Home Trailer Park Cookbook", by Ruby Ann Boxcar of Pangburn, Arkansas.

Diet be damned, I'm going to try one of these recipes and I'm posting it here to appeal to the hearts of comfort-food lovers in trailer parks across America (and everywhere else too:)

Bake this up for your loved ones' next birthdays:

Jell-o Cake

1 box white cake mix
1 box Jell-o, any flavor
5 eggs
2/3 cup water
2/3 cup oil

Combine all the above and mix until moist on low speed, then beat for five minutes on high speed. Bake in a greased tube pan for 1 hour at 350 degrees. Serve plain or with a bottle of WILD TURKEY.

I'm sure David will love the book, it's witticisms and did I mention, it's an autographed copy... LOL! Enjoy! (Hmmm. I wonder if I use Sugar-free Jell-O, if that makes it diet or if it will just fall flat:)

SPAMRONI

Serves 5

1 box macaroni and cheese mix
1 can SPAM sliced
tomato slices
1/2 cup bread crumbs

Fix the macaroni and cheese accordin' to the box instructions. Put the SPAM slices in a casserole dish. Cover the macaroni and cheese. Put the tomato slices and bread crumbs on top. Bake at 375 degrees for 45 minutes.

A different take, er cake...

I have had jello cake, but in a different way. It's actually kind of inventive. Make the white cake with out any jello mix, and put it in the refrigerator once it's all done so the cake is cold..oh and make sure it is still "upside down" still in the original cake pan it was baked in. THEN mix up some jello like you were going to actually make jello, heat up some water, add the mix bringing it to a boil, BUT rather than pour it into a container and let it chill...

Take out the cake and use a toothpick or something like that, and poke holes all over the top (technically it will be the cakes bottom) THEN fill those holes with the jello liquid. Put it back in the refrigerator to set, and after pop the cake out of the cake pan, frost or whatever, and enjoy!

Oh the whole story that [livejournal.com profile] bruinwi and [livejournal.com profile] gotmoof started was quite funny, and then [livejournal.com profile] lowfatmuffin had to get into the fun and that's when the story got really funny.

After my couple of posts yesterday, and the day before of siblings who have grudges etc, I needed the laughs.

I need to check on the latest iteration of that story.

I am making the Spamroni casserole for Friday's potluck. (I decided to call it Spamroni Casserole to gussy it up a little.) I'll let you know how well it is received by the low-fat, organic crowd.

Enjoy! Let me know how it turns out, as my friend BlueDevilSF loves SPAM. On a recent trip, I passed the SPAM museum on two separate occasions. It is located in Austin, Minnesota.

I had half a can of SPAM for dinner on December 31, 1999, and consumed the rest of the can for breakfast on January 1, 2000. SPAM: for a new world order.

One of the women in our taiko dojo makes SPAM sushi rolls for performances. She is Hawaiian. SPAM, rice, seaweed and sesame seeds, who'da thunk? We wash it down with sake.
