Trailer Park Cooking at its Best

mrdreamjeansI've been so busy today reading, adding to and being entertained by the tag-team story inspired by BruinWi and Gotmoof's exchange, that I have gotten little else done. I guess I can allow myself a day of frittering fun, since I have done the moving trip, the two weddings with their attendant trips to Dallas and Boston in the past 6 weeks.
Soon it will be time to gear up and tackle some new goals, but today's indulgence felt good. I also have enjoyed laughing at the cleverness of the writing of my live journal friends.
Tomorrow is my ex David's 61st birthday. I adore this man and always try to get him something special for his birthday. I found the perfect gift in Dallas at Crossroads Market on Tuesday. "Ruby Ann's Down Home Trailer Park Cookbook", by Ruby Ann Boxcar of Pangburn, Arkansas.
Diet be damned, I'm going to try one of these recipes and I'm posting it here to appeal to the hearts of comfort-food lovers in trailer parks across America (and everywhere else too:)
Bake this up for your loved ones' next birthdays:
Jell-o Cake
1 box white cake mix
1 box Jell-o, any flavor
5 eggs
2/3 cup water
2/3 cup oil
Combine all the above and mix until moist on low speed, then beat for five minutes on high speed. Bake in a greased tube pan for 1 hour at 350 degrees. Serve plain or with a bottle of WILD TURKEY.

I'm sure David will love the book, it's witticisms and did I mention, it's an autographed copy... LOL! Enjoy! (Hmmm. I wonder if I use Sugar-free Jell-O, if that makes it diet or if it will just fall flat:)
PS....A congratulatory offering for bluedevilsf in honor of his new job and move to the midwest.... I'm sure his honey Steve will like this too:)
SPAMRONI
Serves 5
1 box macaroni and cheese mix
1 can SPAM sliced
tomato slices
1/2 cup bread crumbs
Fix the macaroni and cheese accordin' to the box instructions. Put the SPAM slices in a casserole dish. Cover the macaroni and cheese. Put the tomato slices and bread crumbs on top. Bake at 375 degrees for 45 minutes.
